A member of the squash family and quite distinguishable by it’s orange color.
What makes the pumpkin orange?… the high amount of carotenoids (Vitamin A)… good for eye health and cancer defense.
This orange gourd is also high in potassium, manganese, copper and riboflavin.
Good for magnesium, phosphorus, iron, folate, calcium, niacin, thiamin, pantothenic acid and Vitamins C & E.
Low in calories, salt, cholesterol and saturated fat. High in fiber.
Aside from pumpkin pie, try pumpkin-oatmeal pancakes, pumpkin waffles, pumpkin bread, soup, stew, ravioli… all good stuff.
